Nattokinase is an enzyme extracted from natto, a Japanese food made from fermented soybeans. Natto is a popular breakfast dish in Japan known for its strong, cheese-like smell. It is produced by adding Bacillus subtilis natto bacteria to boiled soybeans and leaving them until fermented. The only source of nattokinase is from natto and it can only be produced by this specific fermentation. Enzyme extract is produced into capsules and tablets, although it can also be found in powder form in Japan. Natto has long been used in folk medicine to treat cardiovascular diseases, and nattokinase is thought to possess similar properties.
